MALIBU CHICKEN


This is an amazing piece of chicken. Seriously. 

We couldn't believe how tasty it was.

Here is what you will need:


2 chicken breasts, 3 eggs. 3 cloves garlic, 1 cup bread crumbs, 1 cup parmesan cheese, 1 tablespoon of garlic powder, 1/2 teaspoon of salt, 1/4 teaspoon of pepper, 4 pieces of ham, 4 slices of swiss cheese.

For the sauce you will need 2 tablespoons of dijon mustard, 3 tablespoons mayo, 1 teaspoon of yellows mustard, 1 teaspoon of honey.

Preheat the oven to 350.

Separate the egg yolk from the egg. Combine with minced garlic in a bowl.


Pour half in to a plastic bag and add chicken.

Mix it around so it is coated with the mixture.

Do the same for the other breast.


Put the bags in the fridge for FOUR hours.

After the chicken has been marinating, mix bread crumbs, parmesan cheese, garlic powder, and salt and pepper.


Mix together and spread evenly on the bottom of a 9 x 13 pan


Get your chicken out and place in pan. Rub it around a little and coat the entire chicken in the bread crumbs.



Put them in the oven for 40 to 60 minutes. Mine took around 50 minutes to cook.

While it is cooking mi together the sauce.


I ended up putting a little extra honey because the sauce was a little too mustardy for my taste.

Mix it together and put in the the fridge.

When your chicken is cooked, take it out and place the ham and cheese on top of it.



Then put them back in the oven for a couple minutes. Until the cheese is melted.




Then add the sauce on the side to serve as a dipping sauce!

ROSE BOWL


We just happened to be in town for my sister in law's work party at the Rose Bowl. It was unreal. Endless FREE food (and there was an in-n-out truck there!!!), carnival games, face painting, all your favorite carnival snacks, and we can all say we have caught a football on the Rose Bowl field so pretty cool. It was the best weekend ever. And we topped it off with a stop to in-n-out on the way home. That makes 3 burgers in 4 days. We are disgusting. 


HIKING AND CRAFTING


We spent the next morning going on a family hike... I can't remember what the trail is called (whoops) but it was so beautiful!! And I did get asked if I was the girls "high school nanny." So I will take that as a compliment? We then went home and my nieces made these solar system posters pretty much by themselves!! They are the craftiest girls I know!

BEACH DAY

We planned a spontaneous (aka decided about two weeks ago) road trip down to LA to see my brother and his family. We had plans to go to California with some friends and when that fell through we decided we still deserved a vacation! We spent the first day at the beach where the sun occasionally peaked through the clouds :) Scott also got introduced to his new favorite game KanJam! I have a feeling we might be purchasing our own set one day...
