CHICKEN PILLOWS



Ok this is easily one of our absolute favorite dinners, so I am so excited to be posting it!!

Definitely one of those "comfort food" dinners... which I tend to make a lot of.

Also it goes great with mashed potatoes which is another plus

Here is what you will need:


Two cups of shredded chicken breast, One sleeve of saltines, One 8oz package of cream cheese, Half of a stick of butter, One package of crescent rolls, One egg, and One can of cream of chicken soup, sour cream, and cheese for the sauce.

Preheat the oven to 400 degrees

in a bowl melt cream cheese and butter together in the microwave. 

Add chicken and stir. 



Then take one of your crescent rolls and lay it out on a plate. 


Take a spoonful of your chicken mixture and place in the center of the wide end of your triangle. 


Then roll the dough so the chicken mixture is completely enclosed. 


Repeat for each crescent triangle


Then get two bowls, crack and mix an egg in one, and in the other crush up saltines.

Dip your pillow into the egg first. Making sure to coat all sides of it


Then roll it in the saltines



Once again repeat



Put those in the oven for 15-20 minutes. It depends on the oven, but make sure to take them out when they start to get golden.

Next up: the sauce,

Dump your cream of chicken soup into a saucepan and heat on medium.

Once that gets hot add sour cream and cheese.

I never measure it out, just add however much or however little to taste.

Stir it together and turn to low to keep warm.


Once your chicken pillows are out of the oven,



And add sauce and mashed potatoes

CROCK POT MASHED POTATOES


Mashed potatoes are my thing. 

Seriously, my favorite food. 

Sometimes when we are at restaurants I will find whatever comes with a side of mashed potatoes and order it.

That being said, I have never really found a recipe I like enough to make on my own. 

Until now. 

BECAUSE THESE ARE AMAZING. 

And simple.

Here is what you will need:


4 potatoes, 1 clove of garlic, 1 can of chicken broth, 1 1/2 cups of sour cream, 1/4 cup of butter, 2 ounces of cream cheese, salt and pepper, and milk (if needed).

Cut up the potatoes into chunks



Put those in the crockpot and add butter (cubed) and chicken broth.

Put it on high for 4 hours.


Then mash them!


Then add in the sour cream, garlic, cream cheese, salt, pepper and milk if you want a creamier texture.


And enjoy :)

TEN DAYS IN SAN DIEGO

Between the craziness of finishing up in Arizona, celebrating our anniversary, vacationing with Scott's family, and moving back to Utah, we got to spend 10 days in my favorite place on earth. 

It was soooo nice to relax. There was nothing we had to do and we spent many a lazy afternoon just hanging out on the couch. 

But we still managed to fit a few fun things in.

Before we went to Palm Springs, Scott decided to surprise me with another anniversary present.


I had no idea what we were doing and after endless guesses on the car ride to who knows where, we ended at the Old Globe in Balboa Park to see a play!


Which is like one of the greatest gifts Scott could ever give, because while I am a HUGE broadway fan, Scott probably has a few other things higher on his list. 

Into the Woods was amazing. 

I had the songs stuck in my head for days. And still do every now and then


We got to go to the San Diego Temple exactly a year after I went through for the first time!


It was very special. I love that place


We went to baked bear with our friends and Christie matched her ice cream to her pants.


And Scott got a donut filled with ice cream


I happened to also match Christie's pants


And the boys sort of matched but weren't all that interested in having their picture taken.



We got dinner with my sister and her hubs at Sushiota


Where she is famous and everyone knows her cuz she goes there so often.

We got lunch with Grandee at the club...twice


Where we admired the beautiful succulents


And amazing views


It was fun to be back where we had our reception


We tried to recreate wedding pictures but they didn't really look anything like them.

Oh well.


Even Wells Fargo wished us happy anniversary!


On our last night we got to grab dinner with two of my bridesmaids slash life long friends


where I felt really short.


And finally, maybe the most important thing that was done in all the 10 days...

We ate our wedding cake. 


I never had any desire to do this but my mom saved it so we had to.


We tried to recreate the moment.


I debated if I should go put on my wedding dress.


Then we took a picture expressing our feelings about the cake.


Or at least I thought we were doing that.

Scott decided to model?

Let's just say it was much better on the actual day.


But it's ok we are still in love!


Aaaand then we headed out. To Utah. For one more year. 


Can't wait for Thanksgiving!


TORTILLA SOUP


I AM SO HAPPY TO BE REUNITED WITH MY CROCK POT!!!

And this reunion could not have come at a better time. 

Scott and I moved back into our old apartment, our very small apartment, and with boxes everywhere, I didn't really have the space, or the energy, to cook an actual meal. 

So I made crockpot tortilla soup. Super easy and super delicious!

Here is what you will need:


2 chicken breasts, 2 cans of black beans, 1 can of diced tomatoes, 1/2 cup of salsa, 1/2 of a 14 1/2 oz jar of tomato sauce, 2 bags of frozen corn, and a can of chicken broth. 

Layer the ingredients in a crockpot starting with the chicken, and then beans. 


Then add the diced tomatoes and tomato sauce. 


Cover and cook on high for 4 hours.

Add the corn and chicken broth at the end.

Then using two forks, shred the chicken. 



Add sour cream, cheese and chips!


The best part?

LEFTOVERS FOR DAYZ!
