PARK CITY


Our friends Caitlin and Jonny planned a little getaway to Park City last weekend and although we didn't know everyone there, we made some awesome new friendships! We spent the weekend eating way too much, playing games, bowling, shopping at the outlets, staying up wayyyy to late, and obvi a mini photoshoot! Love these peeps and already planning a reunion trip!

CHAMPIONS

At the beginning of the semester, Scott and his boyz decided to go all out with intramurals since it's their last year.

That involved signing up for volleyball, a sport that very few of them actually played. 

But it was all for fun, even when they got smashed their first game. 

As the games went by they started to get in their groove, AND started winning. 

Tonight, they came out on top, and snatched the coveted shirt. 

So fun to cheer them on and see them improve. 

Scott is also now addicted to volleyball.

I LOVE YOU-AVERSARY

On October 11th 2012 Scott and I spent the day apart. We went to school, he went to the gym and I made him a banana cream pie (his fav). We then met up, went up to Sundance to ride the ski lift, got dinner, watched a movie, and then he said those three magic words. I love you. This week as we were lying in bed, I mentioned to Scott that it had been almost two years since he had told me he loved me for the first time. Crazy how time flies. We then decided it would be incredibly cheesy but incredibly fun to spend this upcoming October 11th the same way we did on 10.11.12 So yes. We did celebrate our two year I love you-aversary. And it was awesome.

We spent the morning apart. Scott took a practice GMAT while I dominated in our intramural kickball game (not really). Then I came home and made a pie. After the lift we changed it up a little and watched a movie at the dollar theater instead of Scott's old lanai apartment. And then went to bed much earlier than we did on 10.11.12 I love being married and not having to stay up to hang out with Scott. I just get to fall asleep and have him next to me when I wake up!

PUMPKIN SPICE PEACH CRISP


While perusing Pintrest for some yummy fall recipes I came across this.

Peach Crisp is delicious. So why not give it a little bit of a fall twist?

Here is what you will need:


1 can of peach pie filling (or real peaches if they are in season!), 1/2 cup of oats, 1/2 cup of brown sugar, 1/2 cup of flour, 1/8 teaspoon of baking powder, 1/8 teaspoon baking soda, 2 teaspoons of pumpkin pie spice, 1/2 teaspoon of vanilla, and half a stick of butter.

Preheat the oven to 350 degrees.

Layer peaches on the bottom of an 8 inch baking pan.


Mix in 1 tablespoon of flour.

Then in a separate bowl, mix together dry ingredients.



Melt butter and mix the vanilla in.

Then stir into the dry ingredients.


Then crumble over peaches.



Cook for 35 minutes.


Let it cool and then serve with whipped cream and/or ice cream





Or if you are Scott, eat whipped cream with a little but of peach crisp.
